Pistachio butter
Here's how to prepare an excellent homemade pistachio butter perfect for breakfast using just one ingredient.
The world of vegetable butters – a particular name to indicate that whole category of creams obtained by blending dried fruit – is gradually gaining ground. Tasty, usually sugar-free, they are perfect for those who wish to bring healthy, high-property foods to the table. Pistachio butter is one of them.
The other side of the coin of these preparations is the cost, which is often very high. This is why today we will reveal how to prepare homemade pistachio butter using only unsalted pistachios blended until obtaining a cream. To obtain a smooth cream, the only requirement is to have a rather powerful blender, preferably a jug or Bimby type. Also, buy quality pistachios like those from Bronte .
Preparation
How to prepare the pistachio butter recipe
First, toast the pistachios in the oven at 170°C for 10 minutes . Alternatively you can carry out the same step in the pan, moving them often to prevent them from burning.
Transfer the still hot pistachios onto a clean, washed cloth without fabric softener (or the heat could transfer the scent to the food) and cover them with the cloth itself. Rub them with your hands to remove all the cuticles . This step is optional but will allow you to obtain pistachio butter with a beautiful bright green color .
Once cold, transfer the pistachios to the mixer bowl and start blending at maximum power . Stop from time to time to collect the mixture on the bottom with a spatula and, at the same time, prevent the blades from heating up excessively.
After a few minutes the mixture will begin to change consistency, going from grainy to floury until it becomes fluid thanks to the release of the oil present in the dried fruit. If you have difficulty because your tool is not powerful enough, add a spoonful of light seed oil.
Transfer the pistachio cream into a glass jar and store in the refrigerator.
We prepared pistachio butter using only one ingredient in order to obtain a genuine product. If you want, you can sweeten it by adding, for example, one or two tablespoons of agave or maple syrup or more simply sugar.

The procedure for preparing pistachio butter with the Thermomix (you can use any model from TM5 to TM6 up to TM31) is similar. Start blending at speed 7, using a spatula on the bottom every 30 seconds for the first 2 minutes, then continue at speed. 9 until you obtain a smooth and creamy consistency.
Conservation
Pistachio butter keeps in the refrigerator for 1 month and is excellent spread on bread, to season pasta (having no added sugar) or to enrich porridge or pancakes.
