How to prepare pistachio pesto

  1. Start by placing a saucepan of water on the heat. When the water boils, add the shelled pistachios and blanch them for 2-3 minutes , to soften the skin.
  2. Drain the pistachios and continue removing the skin.
  3. Place the pistachios, basil, salt, pepper, cored garlic and grated cheese in the mixer bowl.
  4. Chop everything, blending intermittently and adding the extra virgin olive oil and water to obtain a smooth and homogeneous sauce .
