Poor man's spaghetti

The poor man's spaghetti is a quick first course to prepare which takes time to cook the pasta, but is really rich in flavour!

Spaghetti del Poorello is a typical dish of traditional Neapolitan cuisine. The history of spaghetti delpoorello or allapoverello, whatever you prefer, dates back to post-war times when you had to make do with little. In that period, in fact, it was difficult to find many ingredients in the city or they were prohibitively expensive, which is why families who had little economic means had to feed themselves with what little they had available. Poor spaghetti was born precisely in this particular historical period.

This traditional recipe is useful to make when you have few ingredients at home and the pantry is almost empty or when you have limited minutes to have lunch or dinner. This recipe with egg, thanks to its goodness, will be able to satisfy everyone's tastes , even the most demanding palates. The original recipe called for the eggs to be fried in lard, if you prefer you can do it this way but the dish will be a bit heavy. If you want to make the poor man's spaghetti lighter , instead, use extra virgin olive oil. Let's see, then, how to prepare this quick and easy recipe in a few simple steps.

Preparing the recipe for the poor man's spaghetti

  1. The first thing to do is to fill a pan with plenty of water, cover it with a lid and put it to boil , raising the heat to maximum.
  2. As soon as the water reaches the boil, add salt and add the spaghetti to cook.
  3. While the spaghetti is cooking, dedicate yourself to preparing the sauce. Equip yourself with a pan large enough to cook the eggs and heat at least 5 or 6 tablespoons of extra virgin olive oil . Abundant with oil as it will be the seasoning of your dish.
  4. Break the eggs and cook them for a few minutes. The egg white must be cooked , but the yolk must remain soft. Season with salt and pepper.
  5. Using a spatula, separate the eggs and place them on a tray or plate without overlapping them.
  6. Drain the spaghetti al dente and throw them directly into the pan with the oil. Add a little cooking water and the grated cheese. Mix and impact.
  7. Place an egg on each plate . Before enjoying them, break the egg yolk with a fork so that it mixes with the spaghetti and enjoy your meal!
