Pumpkin dumplings

Do you want a first course that is different from the usual, tasty and refined? Then you absolutely must try pumpkin dumplings, a recipe that is easy to prepare and will surprise you and your guests. Pumpkin and speck dumplings are an autumnal variant of the classic dumplings , a typical dish of the Alpine tradition.

In this recipe, the sweetness of the pumpkin pairs perfectly with the smoky flavor of the speck , creating a rich and enveloping contrast of flavours. They are ideal as a substantial first course or even as a single dish, perfect for warming up the coldest days. Let's see all the steps to prepare them and some ideas for serving them.

How to prepare the pumpkin dumplings recipe

  1. Clean the pumpkin by removing the peel and seeds, cut it into cubes and sauté in a pan with half a finely chopped onion and a spoonful of extra virgin olive oil . Add grated nutmeg, salt and pepper and cook for about 20 minutes, until the pumpkin has softened .
  2. In the meantime, take some bread from the day before and cut it into half-centimeter pieces.
  3. In a bowl, beat the eggs with the milk and add the bread. Mix then cover with a plate and leave to rest for at least 1-2 hours .
  4. In the meantime, finely chop the remaining onion and dice the speck . Brown them in a pan with butter until the onion is tender.
  5. Once all the ingredients are ready, combine them with the bread: knead with your hands and add a little breadcrumbs at a time to dry the mixture.
  6. Leave to rest in the fridge for 10 minutes, then form dumplings about the size of an apricot (5-6 cm).
  7. To cook the dumplings, dip them in the broth, being careful not to break them. Cook for about 10-15 minutes or until they come to the surface.

You can serve pumpkin dumplings in different ways: in broth, using the vegetable broth from cooking; with butter and sage ; with a delicious gorgonzola fondue (melt the gorgonzola with a little milk or cream) as seen in this video . We followed different proportions between the ingredients and we had a great time.

Conservation

Uncooked dumplings will keep for 1-2 days in the refrigerator . Once cooked, however, it is possible to last up to 3 days as long as they are always well closed in an airtight container.
