Pumpkin gratin in the air fryer

Flavored with garlic and rosemary, air fryer pumpkin au gratin is a quick and easy side dish to prepare.

There is no vegetable that symbolizes autumn better than pumpkin. With its bright orange color and its versatility it is able to make every dish unique. Take the case of pumpkin gratin in the air fryer: few ingredients and lots and lots of flavor in a side dish that goes well with any dish.

In the simplest version, air fryer pumpkin is also suitable for those who follow a vegan diet but no one is stopping you from adding parmesan to the gratin to make it crunchier and tastier. As for pumpkin, however, choose the variety you prefer . We recommend the butternut (or violina), the mantovana or the dedication.

How to prepare the pumpkin gratin recipe in the air fryer

  1. First clean the pumpkin by removing the seeds and peel, using a sturdy knife and a spoon.
  2. Once this is done, cut it into rather thin slices , about half a centimeter, to make cooking quicker. Place them in the air fryer basket and prepare the gratin.
  3. Transfer the breadcrumbs, the cored garlic, the rosemary, a pinch of salt and pepper to a blender. At this stage you can also add some grated cheese. Blend until smooth, then add the oil.
  4. Distribute the mixture over the pumpkin slices and cook at 190°C for 20 minutes . It will be ready when it is soft when pierced with a fork.

You can also transform pumpkin into a second course by preparing delicious pumpkin cutlets in the air fryer . They are simply delicious!

Conservation

The pumpkin gratin will keep in the refrigerator for 2-3 days . We recommend consuming it after heating it for a few minutes in the air fryer or in the oven.
