Pumpkin pancakes in air fryer
Air fryer pumpkin fritters are a typical autumn product, a light but delicious second course.
Let's prepare pumpkin pancakes cooked in the air fryer, for a second course with an autumnal flavour. The result is very light, because in this appliance there is no need for additional oil for frying . The main ingredient is pumpkin, which is also one of the products par excellence of the autumn season; just work and puree the pulp of this vegetable and mix it with other common ingredients. The result is a tasty product, excellent as an appetizer or as a light second course; and if you feel like pancakes in the evening, they are also excellent for dinner!
Preparing the recipe for pumpkin pancakes in the air fryer
- The first thing to do is clean the pumpkin; cut it in two and remove the seeds and filaments inside.
- Then, remove the peel and cut the pulp into slices, then divide them into cubes .
- Pour a drizzle of oil into a pan, add a clove of garlic and the pulp cubes.
- Fry for a few minutes, just long enough to soften the pumpkin. Once finished, turn off and let them cool.
- Place the cubes in a bowl and, using a fork, crush them to puree them.
- At this point, add the potato starch, the grated cheese and the egg.
- Mix vigorously with a wooden spoon or a hand whisk; when the mixture begins to be homogeneous, season with salt and pepper, according to the quantities needed.
- Next, take a sheet of baking paper and use it to line the inside of the air fryer basket .
- With the help of two spoons, take a little dough at a time and give your pancakes a more or less round shape.
- Gradually place them in the basket.
- When all the pancakes are completed, you can proceed with cooking. Cook at 190°C for 10-15 minutes , remembering to turn them halfway through cooking to cook the other side.
- Once they are golden brown, turn off and let cool before serving.
Conservation
Pumpkin pancakes cooked in an air fryer are light and easily digestible, a delight to eat at any time of the day. The best advice is to consume them as soon as they are made , avoiding storing them.
