Air fryer pumpkin fritters are a typical autumn product, a light but delicious second course.

Preparing the recipe for pumpkin pancakes in the air fryer

  1. The first thing to do is clean the pumpkin; cut it in two and remove the seeds and filaments inside.
  2. Then, remove the peel and cut the pulp into slices, then divide them into cubes .
  3. Pour a drizzle of oil into a pan, add a clove of garlic and the pulp cubes.
  4. Fry for a few minutes, just long enough to soften the pumpkin. Once finished, turn off and let them cool.
  5. Place the cubes in a bowl and, using a fork, crush them to puree them.
  6. At this point, add the potato starch, the grated cheese and the egg.
  7. Mix vigorously with a wooden spoon or a hand whisk; when the mixture begins to be homogeneous, season with salt and pepper, according to the quantities needed.
  8. Next, take a sheet of baking paper and use it to line the inside of the air fryer basket .
  9. With the help of two spoons, take a little dough at a time and give your pancakes a more or less round shape.
  10. Gradually place them in the basket.
  11. When all the pancakes are completed, you can proceed with cooking. Cook at 190°C for 10-15 minutes , remembering to turn them halfway through cooking to cook the other side.
  12. Once they are golden brown, turn off and let cool before serving.
