Radicchio and taleggio lasagna

Radicchio and taleggio lasagna are a delicious first course but very simple to make, ideal for special occasions.

It is difficult to find a more appropriate combination than that between radicchio and taleggio . Used in a multitude of recipes (for example pasta or risotto), it is at its best with lasagna. The beauty of this vast category is that it lends itself well to being prepared in advance and baked at the last moment. This way, if you have guests, you won't have to cook in their presence.

We made the radicchio and taleggio lasagna by preparing the homemade béchamel but opting for the ready-made pastry (the fresh one from the refrigerated counter). The choice is yours whether to prepare it at home or use the dry one which does not require pre-cooking.

Wash the radicchio , remove the base and cut it into thin strips. Also finely slice the shallot . Heat a pan with oil then add the vegetables and a pinch of salt. Leave to cook over medium heat for about ten minutes until both have wilted.

In the meantime, prepare the béchamel by melting the butter in a saucepan. Add the flour and, after toasting it, pour in the milk . Mix with a whisk and let it thicken for about 10 minutes. Season with salt and flavor with nutmeg .

Mix the bechamel with the radicchio and prepare to assemble the lasagna. Spread a thin layer of béchamel on the bottom of a baking dish, cover with the lasagne pasta and then more béchamel and radicchio . Distribute the taleggio cheese into cubes, sprinkle with parmesan and continue in this way until the ingredients are used up. Try to get at least 3 layers of dough.

Bake in the oven at 180°C for 30 minutes , covering the surface with a sheet of foil after the first 15 minutes if it darkens too much.

Let everything cool for at least 10 minutes before cutting it so that they have time to compact.

Like all lasagna recipes and specifically in the radicchio category, these too lend themselves to many variations. We have already tried them in different ways, one better than the other: radicchio and zola , radicchio and speck and with sausage and in all cases we made a great impression. If you are looking for a quicker variant, just add some walnuts crumbled by hand between the layers.

Conservation

Once assembled, the radicchio and taleggio lasagna can be stored in the fridge for a day. When cooked, however, they keep for 2-3 days or you can freeze them (preferably already divided into portions) which will allow you to keep them for up to 2 months.
