Enjoyed alone and seasoned with oil, salt and vinegar or included in a mixed salad with lettuce and other vegetables, they are still excellent. What not everyone knows is that radish leaves can also be consumed: washed well, they should be added to salads or transformed into a delicious pesto .
How to make radish salad recipe
- First, remove the leaves and wash them with water and bicarbonate of soda and then rinse them with water only.
- Then clean the radishes by removing the root and the part where the leaves were attached and rinse thoroughly to remove any residual soil. Soak the radishes in cold water for at least 5 minutes so that they become crispier.
- Then cut them into 2 mm thick slices using a sharp knife or a mandolin.
- Combine the radish leaves if you like them and the root in a bowl and season everything with vinegar, oil and salt.
You can also use lettuce instead of radish leaves, whose flavor not everyone likes. You can also add other vegetables such as julienned carrots or diced cucumbers.
