Your guests will be amazed to discover that you are the creators of this delicacy and will find it hard to believe that you didn't buy them already made. Be prepared to provide them with evidence!
Ingredients
For the Raphaels
- White chocolate – 200 g
- Vanilla wafers – 180 g
- Peeled almonds – 20
- Coconut flour – to taste
Preparation
How to prepare the Raffaello recipe
First, coarsely chop the white chocolate with a knife. Then melt it in a bain-marie in a saucepan or in the microwave until you obtain a fluid consistency.
In the meantime, transfer the wafers to a food processor and blend them to obtain a flour. Transfer them to a bowl and add the melted chocolate, mixing well. You should obtain a homogeneous mixture. Cover it with cling film and place it in the fridge for 30 minutes.
Then take small portions with a teaspoon and flatten them slightly in the palm of your hand. If it gets sticky, you can slightly moisten your hands. Place an almond in the center and close, rolling the ball between your hands.
Then pass them one by one in the coconut and as they are ready, place them on a plate. After an hour in the refrigerator the Raffaellos are ready to be served.

Similar and always very quick to make, coconut truffles are a valid alternative to the proposed recipe. Furthermore, if you also love Raffaello, don't miss the cheesecake which recalls all their flavours.
Conservation
You can keep the Raffaellos in the refrigerator for up to a week, well covered in cling film, but you will hardly resist their temptation for that long!
