Peel and coarsely chop the carrots and onions , also dice the celery then place the chopped vegetables in a large pot.
Add the rinsed lentils , cover with a drop of water and put on the heat, leaving to cook for about 20-30 minutes. Only at the end add the salt .
Season with freshly grated ginger and distribute on plates, completing with a drizzle of raw oil if desired.
