Rice pudding with cinnamon: veg and lactose free
Vegan cinnamon rice pudding is a soft and fragrant dessert, ideal for breakfast or a light end-of-meal.
Today we are preparing a very simple dessert made with just a few ingredients, vegan rice pudding flavored with cinnamon. This genuine and appetizing dessert will surely please everyone, both adults and children.
To prepare this vegan dessert we will use rice milk and Carnaroli rice, which is the most suitable for this recipe. Try making it at home too, this dessert is delicious , lactose-free and ready in just a few minutes!
Preparation of lactose-free vegan rice pudding
- Take rice milk and mix it with a cup of water. Also add the vanilla, orange zest and a pinch of salt and transfer everything into a pan. Cook to bring to the boil and add the basmati rice.
- Continue cooking for at least 20 minutes. the rice will have to gain flavor by absorbing all the liquid contained in the pan, and when it has done so, add the cinnamon powder and a spoonful of sugar and continue to cook.
- Stir regularly until the rice begins to melt, and when the rice has reached a creamy consistency, turn off the heat.
- Let your vegan rice pudding cool and serve with a sprinkling of cinnamon . Enjoy your meal!

storage
We recommend storing this rice pudding for a maximum of 1 day , in the fridge and well wrapped in cling film. We do not recommend freezing in the freezer.
