Rice with artichokes and peas is an excellent first course to prepare, a genuine delicacy ready in a short time.

It is a quick and easy recipe, very nutritious and light, because the vegetables give flavor to everything. Easy to cook, they make the dish really tasty and creamy. Once the artichokes and peas have been cooked together, all you need to do is add the rice and the vegetable broth; and, to finish, a generous sprinkling of grated cheese.
Preparing the recipe for rice with artichokes and peas
- First, clean the artichokes and remove the stems and the hardest outer leaves. Then, cut them into slices.
- In a pan, pour the oil on the bottom and add the chopped onion; fry until golden brown.
- Add the peas and cook for a few minutes over moderate heat .
- At this point, add a drizzle of vegetable broth and add the artichoke slices.
- Season with salt and cook for 5 minutes (or a little more, until the artichoke softens).
- Pour the rice into the pan and toast in the sauce; immediately add two ladles of broth, then add the rest several times during cooking.
- After stirring for a few minutes , the rice is ready. You can turn it off and season with grated cheese.
- Mix everything and serve.
