For a truly delicious second course of meat, try the original recipe for chicken Belluno style, presented with mushrooms and polenta.

Belluno chicken is a typical product of northern Italy. Passed down from generation to generation, its preparation is highly appreciated. The reason is easy to say: it consists of one of the fastest and most complete meat dishes.

Its flavor is extraordinary, because it is made up of several substantial and genuine ingredients. The chicken is cooked with vegetable broth, salami and mushrooms . Finally, it must be presented on a bed of soft polenta , strictly homemade by you!

Preparing the recipe for Belluno chicken

  1. To begin, fill a bowl with warm water. Soak the dried mushrooms in it until you need them for preparation.
  2. Clean the champignon mushrooms and cut them into slices. Do the same with the onion and set everything aside.
  3. Chop the parsley and salami (using a blender), which you will need later in cooking.
  4. At this point, carefully wash and clean the chicken legs. Alternatively, you can use the piece of meat you like best and divide it into 4 portions.
  5. Take a non-stick pan, place a knob of butter in it and wait for it to melt on the heat. Then, add the chicken and season with salt and pepper. Fry for 6-7 minutes over medium heat. After this time, temporarily remove the meat from the pan.
  6. In the same, place the sliced ​​onion, 1 clove of garlic and the chopped parsley. Fry for a few minutes.
  7. Add the chicken back to the pan, accompanied by the chopped salami. Pour in the white wine and let it evaporate for 3-4 minutes.
  8. Subsequently, continue to cook, adding the dried mushrooms and 1 ladle of vegetable broth. Cooking must last 45 minutes .
  9. In the meantime, you can dedicate yourself to polenta. Fill a pan with 1.5 liters of water, add a spoonful of oil and a pinch of salt.
  10. Put on the heat and, when it comes to the boil, pour in the corn flour (sifted) gradually .
  11. Leave to cook for 45 minutes , stirring occasionally.
  12. When the chicken is completely cooked, add the champignon mushrooms. Let everything brown for another 5 minutes. Then, turn off.
  13. The polenta is also ready, so you can compose the dishes: fill the bottom with a layer of polenta and add the chicken with the seasoning and sauce on top.

Conservation

Among the various quick and easy recipes in Italy, that of Belluno chicken is truly delicious and makes any lunch or dinner special. Preservation is not recommended , because it is excellent if eaten at the moment.
