For a healthy and tasty meal, try the easy La Spezia mesciua recipe. A soup with legumes and spelled that is delicious.
Also known as mes-ciüa, the original recipe for mesciua is that of a typical product from Liguria. It is a famous soup from La Spezia, completely genuine and healthy. Its name comes from the verb "to mix", which is the main action to prepare this dish.
According to tradition, the legumes collected by the sailors' wives on the docks were mixed while unloading the ships. The dish is nothing more than a soup based on legumes , i.e. chickpeas and beans, and spelled . To flavor everything, you can choose from a variety of aromatic herbs, such as sage or parsley.

Preparing the recipe for Mesciua
- Before you come across this creation, you need to soak its main ingredients. Fill three bowls with cold water and bicarbonate of soda: place the beans in the first, the chickpeas in the second and the spelled in the third. Let them soak for 12 hours .
- After this time, wash the ingredients carefully and let them drain.
- Take three saucepans, fill each with water and divide the chickpeas, beans and spelled into them. Cook over medium heat until they become soft. It takes about 2 hours .
- Once cooked, drain the chickpeas and spelled and add them to the beans. Cook the soup and stir a little more to blend the flavors.
- Turn off and add salt. Transfer the still hot product to plates and season with oil, pepper and sage.
Conservation
This Ligurian recipe is excellent if you plan to serve a warm and genuine dish. In order not to lose its exceptional flavour, we recommend consuming it at the moment. Alternatively, you can keep this legume soup well covered in the fridge for 3 days .
