This ricotta dessert is without cooking and is served cold, as the name itself requires. The list of ingredients is short and easy to find; what cannot be missing are the candied fruit, which enrich the dessert even more with flavour. This cassata-flavoured semifreddo is so good that you won't be able to resist it. You can serve it in practical single portions or on a baking tray and then cut it into slices.

Preparing the recipe for ricotta semifreddo

  1. To prepare the dessert, start by draining the ricotta from its whey for a few hours . To do this, place it in a cloth, press it and let it drain.
  2. Next, place it in a large bowl. Then, add the condensed milk.
  3. Stir to mix the ingredients well.
  4. In another container, pour the fresh liquid cream and whip it with an electric mixer until stiff peaks form.
  5. Once done, pour the whipped cream over the mixture in the bowl. Mix with a spatula, using delicate movements from bottom to top .
  6. When the cream is well incorporated, you can also add the pieces of candied fruit.
  7. Mix again to distribute them evenly.
  8. Take the plumcake mold (or if you prefer single-portion moulds) and cover it with a sheet of cling film.
  9. Pour the mixture into the mold, leveling the surface.
  10. Also cover the top part with cling film. Place the dessert in the freezer for at least 3 hours.
  11. Once this time is over, unmold and serve, decorating as you prefer.

Variation for the ricotta semifreddo with eggs

The classic semifreddo recipe also includes the use of eggs. For a variation of this product, which is more compliant with the classic recipe, you can pasteurize the eggs first . Subsequently, add 6 egg yolks to the mixture, the preparation proceeds as described previously.

Ricotta semifreddo is a fresh and light dessert, good to serve as a snack or at the end of a meal. You can store it in the freezer for several weeks.
