Risotto al telephone is appreciated for the fantastic combination of mozzarella and tomato, so much so that it recalls the flavor of Neapolitan pizza.

This risotto, thanks to the mozzarella that melts with just the heat of the rice, must be deliciously delicious. It's a real delicacy, and even children love it. The only flaw, if it is, is that the row might not make it suitable for an elegant dinner with important guests. In all other cases you have to try it: you will love it! For rice, we recommend Carnaroli , but any other type for risotto is fine. Don't use parboiled, it contains little starch and the grains would remain too separated from each other.

Preparing risotto on the phone

  1. Cut the mozzarella into cubes the size of one centimeter and place it in a colander so that it loses some of its water.
  2. Place the broth in a pan and bring it to the boil. Once achieved, lower the heat so that it maintains a gentle simmer. In the meantime, peel the onion and chop it very finely.
  3. Place a saucepan on the heat to cook the rice, pour in the oil and onion and lower the heat. Brown for five minutes, stirring often. Do not let it burn, add a spoonful of water if necessary.
  4. Pour the wine, bring to the boil and simmer for 3-4 minutes.
  5. Add the tomato puree and cook over medium heat for five minutes.
  6. Pour in the rice and turn it immediately. Continue cooking by adding a ladle of broth when the sauce reduces and when the previous ladle has evaporated. Every now and then remember to turn the rice. The rice should take 16-18 minutes to cook.
  7. Season with salt and, if you like, pepper. Once cooked, the rice must be al dente and al dente.
  8. Turn off the heat, stir in the parmesan first, stirring well and quickly to incorporate air, then the diced mozzarella. It still runs very well and continuously. The heat of the rice must melt the mozzarella, and by stirring you must distribute it evenly.
  9. Remember to turn off the heat and turn the rice immediately, otherwise the mozzarella could form blocks which compact as the rice subsequently cools.
  10. Cover the pan and leave to cool for a couple of minutes. Serve very hot.

This telephone rice recipe must be enjoyed as soon as it is ready , as previously mentioned it is essential to enjoy the dish hot and freshly made because, over time, the mozzarella will tend to solidify into very unappetising blocks. We therefore advise against storing it in the fridge or freezing the risotto in the freezer.
