Risotto with artichokes and saffron

Tasty and perfect for a different lunch than usual: here is the recipe for artichoke and saffron risotto, a simple first course.
Yellow risotto is a classic of Italian cuisine. Saffron is a perfect spice for flavoring many different types of first courses and today we offer you a tasty and particular variant: risotto with artichokes and saffron.
This aphrodisiac spice, together with artichokes, gives life to a perfect risotto to prepare this season . The procedure is similar to the classic artichoke risotto to which however we will add a sachet of this precious spice to give color and flavour. Ready to discover all the steps?
Preparation
Artichoke and saffron risotto
First clean the artichokes : remove the hardest outer leaves, stems and tips. Cut the artichokes first in half and then into segments, remove any internal fuzz and gradually immerse them in water acidulated with lemon juice to prevent them from oxidising in the air.
Take a large pan, pour a drizzle of olive oil on the bottom, add the peeled garlic and put on the heat, brown for a few moments then add the well-drained artichokes . Let them cook until they soften. Once cooked, season with salt , remove the garlic and place the artichokes in a bowl.
In another saucepan, melt a knob of butter with a drop of oil , add the rice and toast for a few minutes. Pour in the white wine , let the alcohol evaporate completely then pour in the boiling rim .
Continue cooking like a normal risotto, calculating 16-18 minutes of time and, halfway through cooking, also add the saffron powder and the artichokes .
Once the rice is cooked, turn off the heat, stir in the rest of the butter , the grated parmesan and the chopped parsley . Serve the artichoke and saffron risotto piping hot.
Saffron is perfect for ennobling even the simplest risottos such as the one with courgettes and the one with mushrooms .
Conservation
We recommend consuming this particular and exquisite risotto at the moment . We do not recommend freezing in the freezer.
