Preparing the recipe for risotto with artichokes and sausage

  1. The first thing to do is clean the artichokes, then remove the outer leaves, the stem and the top.
  2. Cut them first in half, then into strips and place them in a bowl full of water, acidulated with lemon juice, for about 15 minutes. Then, drain them and dry them with absorbent paper.
  3. Pour a couple of tablespoons of oil on the bottom of a pan with high sides, add a clove of garlic and let it brown.
  4. As soon as it is ready, add the artichokes; fry for about 10 minutes .
  5. Next, remove the sausage casing, crumble the inside and pour it into the pan with the artichokes.
  6. At this point, add the rice and toast for a few minutes.
  7. Pour in the wine and let it evaporate completely.
  8. As soon as it is done, add the vegetable broth little at a time (i.e. as it is absorbed) and continue cooking, stirring occasionally.
  9. When the rice appears cooked, turn off and remove from the heat; season with salt and pepper and cover with grated cheese and a small piece of butter , then stir in, mixing everything well.
  10. When ready, plate and flavor as you prefer, for example with basil leaves.
