Roast Mozzarella in Carrozza

Baked mozzarella in carrozza is the lighter version of the traditional Neapolitan dish and is the perfect recipe for those who want something tasty without having to fight with the scales. Two soft layers of bread enclose a stringy heart of mozzarella and this recipe has the only variation in the cooking method.

No frying as expected in the traditional recipe, but simple browning in the oven which will allow you to obtain crunchy triangles on the outside and soft on the inside. How to make light baked mozzarella in carrozza

  1. Take the mozzarella and cut them into slices.
  2. Place the slices of mozzarella on a plate and dab it with a sheet of kitchen paper to dry them. Alternatively you can use pizza mozzarella.
  3. Spread the mozzarella slices on the bread and cover with another slice of bread.
  4. Divide each square into four triangles. Beat the eggs in a small bowl and season with a pinch of pepper.
  5. First dip the bread triangles in the flour and then in the beaten eggs . Finally, pass them in the breadcrumbs to obtain coverage on both sides. If you want to make everything even crunchier you can double-bread it by passing it again in the egg and then in the breadcrumbs.
  6. Gradually place the breaded triangles on a baking tray lined with baking paper greased with a drizzle of oil, pour another drizzle of oil over the bread and then bake at 200°C and cook the mozzarella in carrozza in the oven for 10 minutes.
  7. Once cooked, remove from the oven and serve immediately, enjoy your meal!

We recommend consuming the aperitif hot at the moment , alternatively you can keep it in the fridge for 1-2 days and reheat it in the oven before serving it. We do not recommend freezing in the freezer.
