Very few ingredients are enough to prepare an excellent oven-roasted cauliflower, whole or sliced. Here is our light recipe.

Roasted cauliflower is a perfect light side dish if you are on a diet or simply looking for a tasty but at the same time simple way to cook this typical cold season vegetable. Cooking cauliflower in the oven is in fact the best way to keep calories low but at the same time make it tasty , adding just a touch of oil and some spices.

You can prepare the roasted cauliflower in slices or whole. We will show you the first technique, faster and perfect for obtaining a tasty side dish , but we will also leave you with the instructions for cooking whole roasted cauliflower. Ready to get cooking?

How to make roasted cauliflower recipe

  1. First, remove the outer leaves of the cauliflower and wash it well under running water.
  2. Transfer it to a sufficiently large pan with 2 inches of water on the bottom and cook it for 5 minutes starting from the boil. This step is very useful for tenderizing the toughest part of the cabbage, i.e. the core, and then speeding up oven cooking.
  3. Once this is done, cut it into 1.5 cm thick slices parallel to the core and place them on a baking tray lined with baking paper.
  4. Finely chop the garlic, chilli and parsley and mix them in a bowl together with the grated lemon zest.
  5. Salt and pepper the cauliflower slices, drizzle them with a drizzle of oil (the ideal is to use an oil spray or a pastry brush) and distribute the aromatic mixture .
  6. Cook in a preheated oven at 200°C for 30 minutes . Before taking it out of the oven, make sure it is tender by skewering it with a fork.

You can flavor the roasted cauliflower in the oven (whole or sliced), with the ingredients you prefer . Excellent paprika, curry, garlic powder and all the aromatic herbs, fresh or dried, finely chopped as seen in this video .

To cook whole roasted cauliflower, the procedure and ingredients to flavor it are the same. The only difference is that the whole cabbage will need to be blanched for 10 minutes (instead of 5). As for the seasoning, add a couple of tablespoons of oil to the aromatic mixture, brush the surface of the cauliflower well after placing it on a baking tray lined with baking paper and cook at 180°C for 45 minutes . To test the cooking you can use a long skewer toothpick.

Conservation

Roasted cauliflower will keep in the refrigerator, in an airtight container, for 2-3 days . You can heat it either in a pan or in the microwave before consuming it.
