Baked saffron potatoes are a delicious and aromatic side dish that is simple to prepare.

Making saffron potatoes recipe

  1. Wash, peel and cut the potatoes into wedges and soak them in warm water for 1 hour.
  2. Drain them, dry them with a clean cloth and transfer them to a baking sheet lined with parchment paper.
  3. Dissolve the saffron in a cup of warm water and season the potatoes. Add oil, salt and rosemary.
  4. Bake the potatoes in a preheated oven at 180°C for about 30 minutes.
  5. Take them out of the oven and serve them hot to your guests!

Variations of saffron sautéed potatoes

You can also cook saffron potatoes in a pan, and in different ways. After soaking for an hour , transfer the potatoes to a large pan with the addition of the ingredients. Cook over low heat for 20 minutes with the lid closed and for another 10 minutes over high heat.

If you don't want to leave the potatoes soaking, instead try boiling them in boiling water for 20 minutes before browning them. Alternatively, add the water a little at a time directly into the pan where you will cook the potatoes with a drizzle of oil. Proceed for about 20 minutes and then turn off the heat, add salt and saffron, and mix until the crispy potatoes are well seasoned.

Add a shallot while pan cooking the potatoes if you like a more intense flavor. Then use your favorite spices : chives, oregano, sage, thyme or paprika. Try enriching this side dish with peppers!

storage

The fragrance of freshly made potatoes is another story altogether. But if you want to keep them, put them in the fridge for a maximum of one day and then put them back in the pan to heat them up.
