Sardines in saor
Sardines in saor are a delicious and easy-to-make typical Venetian dish, ideal for an aperitif or for a single dish full of flavour.
Today we're going to Veneto to cook a dish that's really rich in flavor and imagination: sardines in saor, an original recipe that will bring flavor and tradition to your table. This appetizer is prepared with sardine fillets , which are fried and served with caramelized onions, raisins and pine nuts.
The preparation of this sardines in saor recipe is really simple and made with just a few ingredients, but for an optimal yield the sardines will have to rest in the fridge for half a day (even better if for 24 hours), so as to marinate in the saor and absorb all the aromas and flavours. Preparation of sardines in Venetian sauce
- Let's start with the onions. Take the onions, peel them and cut them into strips, then leave them to soak in a bowl of cold water for at least 15 minutes. In this way they will soften and will be of the perfect consistency for our saor.
- Take the sardine fillets and clean them by removing the head, bone and tail.
- Now take the onions and sauté them in a non-stick pan with two tablespoons of extra virgin olive oil for about 10 minutes.
- Add half a glass of white wine vinegar, salt, pepper, raisins, pine nuts and bay leaves, then cook for about 20 minutes over low heat with the lid on. If it gets too dry you can add a little warm water.
- Once the saor is ready, set it aside to cool down and take the cleaned fish.
- Flour the sardines well on both sides and fry them in boiling seed oil until they are golden and crunchy.
- As soon as they are ready, dry them with a paper towel
- Assemble the dish by first placing a layer of onions, then the sardines and again a layer of saor. Continue to layer in this way until all the ingredients are used up.
- Finally let it rest in the fridge for half a day: the sardines will absorb all the flavors and your dish will be a real treat . Enjoy your meal!

The recipe for sardines in saor has a secret: the marinating time. The longer you leave the fish in the saor, the better the finished product will be. However, we advise you to keep them for a maximum of 4-5 days in the fridge, inside a container with an airtight lid. We do not recommend freezing in the freezer.
