Sautéed artichokes

Sautéed artichokes

Here are the pan-fried artichokes with fresh chopped parsley: an excellent side dish for meat, egg or cheese dishes.

Today we are preparing a fantastic side dish, sautéed artichokes, a quick and simple dish, perfect for enhancing the flavor of this vegetable when it is in season. The only slightly complicated operation is cleaning , but if you follow our advice, you will see that in a short time you will be able to complete this operation too. Clearly you can also opt for an already cleaned or frozen product to make the steps even quicker.

It is very important not to let them blacken, given that artichokes tend to oxidize quickly in the air: for this reason it is a good idea to leave them soaking in water and lemon before cooking them. Let's go straight to the kitchen and start studying all the steps to make this delicious vegetable side dish!

Preparation

How to prepare the sautéed artichokes recipe

1

To clean artichokes we recommend wearing gloves. Once done, remove the harder external leaves and the internal beard, finally cut them into thin slices. As a final step, soak them in water and lemon.

2

Meanwhile, wash the parsley and chop it.

3

Fry the garlic (for a more intense flavor you can chop it) in a large pan with a drizzle of extra virgin olive oil and add the artichokes well drained of the water and lemon.

4

Sauté over medium heat for a few minutes, then lower the heat and add a ladle of hot broth , a pinch of salt and pepper . Close the lid and leave to cook for 10-15 minutes. If the liquid tends to dry out too much during cooking, add more hot broth.

5

Check the softness of the vegetables by pricking the artichokes with a fork: if they are tender, turn off the heat, otherwise sauté for another minute on high heat. Add salt if necessary and sprinkle with parsley . The dish is ready!

Here is a video recipe with all the steps to make this very easy second course.

For an even richer side dish we recommend tryingartichokes and potatoes . On the contrary, if you are in a hurry and have little time, cook the sautéed artichokes in the Thermomix .

Conservation

You can store the sautéed artichokes in the refrigerator for a maximum of one day, in an airtight container. However, we suggest you consume them once they are ready, because they are decidedly tastier.
