Sautéed aubergines: a delicious side dish of pan-fried vegetables

Sautéed aubergines are a delicious side dish, perfect for bringing tasty vegetables to the table and for pairing with any dish.

Today we are preparing some wonderful pan-fried aubergines, a really simple side dish to prepare, but which will make all your guests' mouths water. These vegetables are cooked and flavored with garlic and parsley, for a fragrant and inviting result.

You can enjoy them combined with meat , fish , eggs, but also alone, if you love aubergines and want to treat yourself to a quick and light lunch. Or, an idea could be to use them in a first course, perhaps sautéing some pasta, or on toasted bread for an original and colorful vegetable appetizer.

How to make light sautéed aubergines

  1. Wash and cut the aubergines into the shape and size you like best, then place them in a colander with coarse salt to drain for about 15-20 minutes. Then rinse them under water and dry them well.
  2. Heat the oil in a pan with the garlic cloves, then add the aubergines and leave to cook. Add a ladle of broth , salt and pepper and cook for 10 minutes until the vegetables are soft.
  3. Once done, sauté the aubergines in the pan and add the coarsely chopped parsley.

It is also possible to prepare sautéed aubergines in the oven. After having cut them and purged them, an operation which is no longer as necessary as it used to be because this vegetable no longer has a bitter note that can annoy, place them on a baking tray covered with baking paper. Season them with oil, salt, pepper and garlic (whole or chopped) and mix well with your hands. Cook in the oven at 180°C for 25 minutes , stirring halfway. Before serving, flavor with fresh chopped parsley.

  1. Making this dish with the Thermomix is ​​really very simple and intuitive . First, pour the oil and garlic into the bowl and brown for 3 minutes. 100°C speed 1 counterclockwise .
  2. Add the aubergines, properly purged and cut into cubes, a pinch of salt, pepper and a ladle of water or broth and cook for 15 minutes. 100°C speed 1 counterclockwise .
  3. Season with fresh chopped parsley before serving.

storage

The aubergines will keep for a couple of days in the refrigerator closed in an airtight container. Freezing is not recommended. They can be reheated in a pan or in the microwave.
