Savory Colomba in air fryer

Perfect for both Easter and Easter Monday, the savory colomba in the air fryer without leavening can be prepared in a very short time.
When Easter is upon us, the desire to bring tasty spring recipes to the table becomes ever stronger as does the desire to take advantage of those magnificent dove-shaped paper molds . If making the classic sweet colomba is too difficult for you, here is our savory colomba in the air fryer.
Prepared without leavening (we will use instant yeast for savory pies) it is perfect both for Easter, served as an appetizer or instead of bread) and for Easter Monday. Versatile beyond imagination, the neutral dough can be enriched with cured meats and cheeses of your choice . Whether it's cooked ham, salami or bacon, provola, asiago or scamorza, the result will be sensational. Just make sure that the mold fits into the basket of your air fryer as they are not all the same size.

Preparation

First, combine the eggs , milk and seed oil in a bowl and mix quickly with a fork.
Add the sifted flour with the baking powder and parmesan and give a quick mix before adding the salt .
At this point, add the cured meats and cheeses you have chosen after cutting them into cubes of about half a centimeter. We used cooked ham and scamorza but take a look at the alternatives below.
Pour the mixture obtained into a 500 g paper dove mold . Level the surface and cook in an air fryer at 160°C for 50 minutes . If after the first 30 minutes you notice that the surface is excessively coloured, cover it with a sheet of tinfoil. To understand if it is ready, proceed with the toothpick test .
Let it cool completely on a wire rack before cutting.

Variants
As you can easily imagine, this dough can be customized in many ways. In addition to cooked ham, you can use other cured meats or sausages such as raw ham, speck, bacon or salami or a mix of these to transform it into an empty-the-fridge recipe.
The same goes for cheeses with the only precaution being to choose them dry. For example, it is better to avoid classic mozzarella, preferring instead pizza mozzarella. The parmesan included in the recipe can also be replaced with parmesan or pecorino.
To make your dove even more beautiful, distribute some flaked almonds or seeds (sesame, pumpkin, poppy, sunflower, etc.) on the surface .
Conservation
We advise you to prepare the savory Colomba a maximum of one day in advance in order to better appreciate its soft consistency. In fact, it remains as soft as freshly made for a maximum of a couple of days wrapped in foil.
