Savory pepper pie

If you are planning a dinner with family or friends or simply have some fresh peppers to use, you cannot fail to try the recipe for savory pie with peppers. Savory pies like the ones we propose below can also be prepared in advance , so that they are ready just to be reheated as desired. Ours will be a classic puff pastry with peppers, with the addition of mozzarella, eggs, ricotta and a few other ingredients. Ready? Let's go prepare it!
Preparation of the savory pie with baked peppers
- Drain the mozzarella from the preservation liquid, cut it into cubes and leave it to drain again directly into a colander.
- In the meantime, wash the peppers, remove the stems, seeds and internal filaments and cut them into chunks.
- Roast them on a non-stick pan with a drizzle of olive oil, turning them from time to time to obtain even cooking .
- In a bowl, open the eggs and add the drained ricotta, salt and pepper and some grated cheese to taste.
- Also add the cooked peppers and the diced mozzarella and mix everything well.
- Unroll the puff pastry and place it inside a tart mold with its baking paper.
- Prick the base using the tines of a fork.
- Fill the puff pastry by distributing the filling inside.
- Add a sprinkling of oregano to taste.
- Bake in a preheated oven at 180°C and leave to cook for at least about 35 minutes .
- Once cooked, remove from the oven and leave to cool before cutting into wedges and serving.

Conservation
This rustic pepper cake can be kept in the refrigerator for about 2-3 days , inside a container with an airtight lid or well covered with transparent film. We do not recommend freezing in the freezer.
