The savory artichoke pie is a real delight , and has the advantage of being served hot, warm or cold. There are many ways to prepare this fabulous dish, which can be served as an appetizer or main dish depending on the situation.
Our recipe is the classic one, with artichokes, eggs and cheese, but for an extra edge you can also add ham, speck, sausage, provola … well, you understand right? Like all savory pies, your imagination reigns supreme here. Let's get started right away ! Here's the recipe for savory artichoke cake!

Preparation
How to prepare the savory artichoke cake recipe
First of all, start cleaning the artichokes , and once you have the hearts, leave them to soak in water and lemon so they don't oxidize.
In a pan, pour a good amount of extra virgin olive oil and brown the finely chopped onion and the artichokes , which you will have to peel to obtain nice strips.
Pour in the white wine and season with salt and pepper . When the vegetables are soft, start creating the filling.
Beat the eggs with the cheese and add the artichokes and onions, the milk (or cream) and if you want some diced cheese (provola is fine). Complete with chopped fresh parsley .
When you have obtained a homogeneous mixture, unroll your puff pastry into a round baking dish and pierce the bottom with the tines of a fork.
Add the filling and fold the edges. Cook in the oven at 180°C for about 30 minutes , and when the surface is nice and gratin, turn off and let it rest for at least 10 minutes before serving.

The variant with potatoes
If you like, you can also add 2-3 potatoes . After blanching them in hot water for about 10 minutes, drain them, remove the skin and cut them into small pieces . They will still be decidedly raw, for this reason you have to put them in the pan to cook together with the artichokes until they are a little softer.

Conservation
We recommend storing the cake in the fridge for a maximum of 2-3 days , inside a special container with a lid. We do not recommend freezing in the freezer.
