Savory radicchio and walnut pie: here is the step-by-step recipe for an appetizer or a main dish!
Today we offer you another recipe with radicchio: that of the radicchio, ricotta and walnut savory pie, a delicious and tasty rustic cake, perfect to serve as an appetizer or as a main course. If you want to make your savory pie even tastier, you can also add speck or scamorza to the filling.
The puff pastry base is enriched with a tasty filling made of ricotta and radicchio where walnuts are the key component that gives the dish a pleasant crunchy note. Very easy to prepare, it is perfect for dinners with family or friends.

Ingredients
For the savory pie
- Puff pastry – 1 roll
- Radicchio – 2 heads
- Ricotta – 250 g
- Shelled walnuts (optional) – 40 g
- Grated Parmesan – 50 g
- Eggs – 2
- Shallot – 1
- Extra virgin olive oil – 2 tablespoons
- Fine salt – to taste
Preparation
Savory radicchio and ricotta pie
To prepare this delicious savory pie, start by peeling the shallot , then slice it thinly and brown it in a pan with a drizzle of olive oil .
Continue adding the radicchio , washed and cut into strips. Mix and cook for about ten minutes, if necessary add a little water and mix regularly. Once cooked, turn off the heat, add salt and leave to cool.
In a large bowl mix the ricotta with the eggs , the grated Parmesan and a pinch of salt . Add the radicchio and chopped walnuts , mix to combine all the ingredients.
Unroll the puff pastry and line a tart mold with it. Prick the base with the tines of a fork, pour the filling inside and level with the back of a spoon. Fold the edges and bake at 180°C for 35-40 minutes.
Once cooked, remove the radicchio cake from the oven and leave to cool for at least half an hour before cutting.
We prepare the radicchio savory pie many times during the cold season and for this reason we enjoy experimenting with different combinations. For example, try the one with radicchio and scamorza , if you love the smoked flavor it will certainly not leave you indifferent (a bit like the radicchio and speck one ). Creamy but more particular is the version with radicchio and stracchino .
Conservation
The radicchio and ricotta savory cake will keep in the refrigerator, closed in an airtight container, for 2-3 days.
