Preparation
Savory radicchio and speck pie
First, slice the radicchio , removing the hard core. Cook it in a pan with oil and a pinch of salt until it is very tender.
Transfer it into a bowl and once cold add the eggs , cream , grated cheese and speck cut into strips. For this reason we advise you to have the speck cut into a single slice 3-4 mm thick.
Unroll the puff pastry and, keeping the baking paper supplied, transfer it to a 24cm diameter baking pan.
Pour the mixture, level it and cook in the oven at 180°C for 40 minutes until the center is well set. Let it cool for at least 30 minutes before cutting and serving.
Variants
This quick and easy cake is a very versatile dish that lends itself to different variations.
- To make it stringy, you can choose to prepare the radicchio, speck and scamorza savory pie . Simply add 150 g of this cheese (we recommend the smoked variant) cut into cubes directly to the egg mixture and proceed as per the recipe.
- The savory pie with radicchio, speck and walnuts has an extra edge thanks to the crunchy note given by the dried fruit . Compared to the previous steps, you simply need to add a handful of coarsely chopped walnuts to the mixture.
- If you don't like eggs or are intolerant, you can prepare the cake simply by mixing radicchio and speck. The choice is yours whether to add other cheeses in addition to the grated one. We recommend you try the one with radicchio and crescenza or radicchio and stracchino .
Conservation
Salta cake can be stored in the refrigerator, in an airtight container, for up to 2 days.
