With the arrival of the cold season, all those recipes that have winter vegetables as protagonists are becoming very popular. Sicilian cauliflower combines this characteristic with the typical flavors of this magnificent region, resulting in an amazing dish to say the least.

How to prepare the Sicilian cauliflower recipe

  1. First, remove the cauliflower florets by cutting the larger ones in half or into quarters. Wash them well under running water then cook them in plenty of salted water for 10 minutes . They should be tender but not mushy.
  2. Sun them and transfer them to a baking dish suitable for cooking in the oven. Let it cool.
  3. In the meantime, break the bread into pieces with your hands or cut it into cubes.
  4. Add it to the cauliflower together with the olives , parmesan , anchovies chopped by hand and plenty of oregano . Then season with oil , salt and pepper and mix with your hands to distribute all the flavours.
  5. Bake in the oven at 200°C for 25 minutes . You can serve it either hot or at room temperature.

Sicilian cauliflower was born as a recovery recipe. It is therefore not uncommon to find breadcrumbs instead of stale bread. Green light also for variations on the ingredients such as adding cherry tomatoes cut in half (6 will be enough) or dried tomatoes (4 fillets of those in oil). For a version also suitable for those who follow a vegetarian or vegan diet, it will be sufficient to omit the anchovies .
