Sicilian stuffed peppers

The stuffed peppers prepared with the Sicilian recipe are a typical product of this beautiful island that is really simple to prepare.

Stuffed vegetables are a must, especially in summer, perhaps because in principle they are excellent to enjoy even at room temperature. Take Sicilian stuffed peppers for example: just a few ingredients are enough to make this traditional vegetarian recipe whose filling is made up of grated bread and cheese as well as being flavored with a generous dose of parsley .

This variant of the classic peppers therefore does not include meat . However, some people like to make the filling tastier by, for example, adding anchovies or capers. You can easily decide on this aspect, stuffed peppers will always be excellent.

How to prepare the Sicilian stuffed peppers recipe

  1. First, blanch the tomatoes in water after cutting the base with an X-shaped cut. A couple of minutes will be enough, after which you will drain them and remove the skin. Cut the pulp into cubes and keep it aside. Alternatively you can use 400 g of peeled tomatoes.
  2. Wash the peppers well, remove the cap and then clean the inside, removing seeds and white filaments. Place them in a lightly oiled baking dish.
  3. Prepare the filling by mixing the grated bread, the two grated cheeses, the parsley chopped with a knife, the diced caciocavallo cheese and finally a pinch of salt and pepper in a bowl. Then add the diced tomatoes and as much oil as needed to moisten the mixture.
  4. Stuff the peppers and cook at 200°C for 30 minutes . The choice is yours whether to serve them hot or at room temperature.

Some variations of Sicilian stuffed peppers include the addition of pine nuts (20 g) and raisins (100 g) to the filling. In this case the flavor will turn more sweet despite the presence of cheeses. Southern Italy and stuffed peppers go hand in hand. We recommend you also try the Calabrian version, i.e.pipi chini, and the Neapolitan version, i.e. stuffed peppers.

Conservation

Stuffed peppers will keep in the refrigerator for 2-3 days . You can enjoy them warmed up or at room temperature.
