Preparation of the gluten-free vegan muffin recipe

  1. Start by taking a large bowl and mixing together the yogurt, milk and rice oil.
  2. Mix well and when the ingredients are well blended together, add the flour, sugar, yeast and vanilla pod.
  3. Continue mixing vigorously (you can help yourself with a whisk) until you obtain a creamy and compact mixture .
  4. Take a muffin tray and after inserting the cups inside (alternatively you can dirty the molds with rice flour), pour the mixture, stopping 2/3 of the way from the edge and cook everything in a preheated oven at 180° C.
  5. Cook for 15 minutes , checking the cooking from time to time and removing them when they are golden on the surface.
  6. When the muffins have cooled, dust them with a little icing sugar .

This recipe lends itself to some simple variations. The first is gluten-free vegan chocolate muffins which you can obtain by adding about 150 g of chocolate chips after pouring the mixture into the muffin pan.

Another very delicious variant is that of gluten-free vegan rice and blueberry muffins. In this case you can insert some blueberries into the dough ( about 150 g) and add others at the end to have colorful and delicious muffins ( 4-5 per muffin will be fine).

storage

These sweets will keep in the fridge for 2 or 3 days . Simply place them on a plate and cover it with cling film or wrap them in absorbent paper and store them in a container without a lid .
