So much flavor in a simple cauliflower omelette

Good both baked and pan-fried, the cauliflower omelette is good on its own or inside a sandwich. Here's how to prepare it and some tasty variations.

Seemingly banal, this dish holds great surprises. We are talking about the cauliflower omelette, good both in the pan and in the oven , made so tasty by the presence of anchovies . In fact, this poor ingredient goes perfectly with the delicate flavor of cauliflower and together they create a truly delicious omelette.

The first thing to do will be to cook the cauliflower and then sauté it in the pan with oil, garlic and anchovies. You can also add black olives or cherry tomatoes for richer and tastier versions. Omitting the anchovies will tone down the flavor of the omelette a bit but will allow you to get a vegetarian version.

How to prepare the cauliflower omelette recipe

  1. First, remove all the florets from the cauliflower and boil them in plenty of salted water for about 15 minutes after boiling. Once tender (you can test for doneness by skewering them with a fork), drain them with a slotted spoon and set aside.
  2. In a pan, heat the oil with the garlic clove and melt the anchovy fillets.
  3. Add the cauliflower and cook for a few minutes. If the florets are too large you can cut them into pieces with a knife.
  4. Beat the eggs separately in a bowl with a pinch of salt and pepper. Add the cauliflower with all the cooking juices and mix well.
  5. Lightly oil the same pan and, once hot, pour in the eggs. Cover and leave to cook for 10 minutes then, using a lid, turn it over and continue cooking on the other side for 5 minutes . You can enjoy the omelette either hot or at room temperature, alone or inside a sandwich.

Tips and variations for a perfect cauliflower omelette

To prepare the baked cauliflower omelette, pour the mixture into a 24 cm diameter baking pan lined with baking paper and cook at 200°C for 20 minutes.

But the variations certainly don't end here: the cauliflower and potato omelette is even more substantial and you can prepare it simply by cooking two potatoes cut into 1cm cubes together with the cauliflower. Then combine everything in the pan and you're done. How can we not mention the delicious cauliflower and onion omelette: slice an onion and fry it in the pan together with the anchovies, then continue as per the recipe and you're done.

Conservation

The omelette can be kept in the refrigerator, well covered in cling film, for a couple of days . You can consume it at room temperature or slightly heated in a pan or in the microwave.
