How to make the potato bread recipe

  1. First, boil the potatoes well in advance. While they are still hot, mash them with a fork or potato masher but make sure they are very cold when using them. All excess moisture will have to be evaporated.
  2. Pour the lukewarm water into a bowl and let the fresh yeast dissolve together with a teaspoon of sugar.
  3. Then add the flour and start kneading with a spoon . When the dough begins to compact, add the potatoes and salt. You will need to get a smooth and homogeneous dough.
  4. Transfer it back to the oiled bowl and put it to rise in the oven off with the light on until it has doubled. It will take approximately 3-4 hours.
  5. Then transfer it to the baking tray lined with parchment paper without kneading it: simply turn it upside down and, if you like, make incisions on the surface with a sharp knife.
  6. Let rise another hour.
  7. Then cook at 190 ° C for 30 minutes , lowering the temperature to 170 ° C for the last 10 minutes .
