Preparing the spanakopita recipe
- First, wash and dry the spinach.
- Slice the onion and place it in a non-stick pan, along with a spoonful of olive oil.
- Let it brown, then you can immediately add the spinach.
- Season with salt and pepper, cover with a lid and cook for a few minutes (about 5).
- Once done, place the spinach in a colander and press to release the excess liquid .
- Place the vegetables in a bowl, then add the feta, crumbling it .
- Also add the eggs and mix vigorously, so as to obtain a mixture that is as homogeneous as possible.
- At this point, brush a little oil on the inside of a baking tray.
- Line the inside with a sheet of phyllo pastry, then brush it with more oil and cover it with another sheet of pastry. Repeat these steps two more times, so as to overlap another 2 sheets.
- Pour the filling and distribute it evenly.
- Cover with another 4 sheets of phyllo pastry, interspersing them with a brush of oil.
- Trim the excess edge , folding over a bit of the edge to seal the filling.
- Brush the surface with more oil, then create light incisions in the dough, forming a grid.
