Salmon and spinach tagliatelle

Tagliatelle with spinach and salmon: recipe for preparing a tasty but at the same time elegant and refined first course.

Here is a first course of fresh egg pasta , tasty and rich in ingredients. Tagliatelle with spinach and salmon are perfect for both family dinners and more important occasions. In fact, the presence of salmon is able to ennoble the dish although, ultimately, it is a very simple recipe.

To bind the ingredients and make everything creamier we used ricotta, taking advantage of a combination that we have proposed several times (remember the savory pie and lasagna ?)

Ingredients

For the salmon and spinach tagliatelle

  • Fresh tagliatelle – 400 g
  • Fresh salmon – 200 g
  • Fresh spinach – 300 g
  • Ricotta – 150 g
  • Spring onion – 1
  • Extra virgin olive oil – 2 tablespoons
  • Salt – to taste

Preparation

How to prepare spinach and salmon tagliatelle

First, finely slice the spring onion and brown it in a pan with a drizzle of olive oil over a low heat.

After a few minutes, add the cleaned spinach , drained of the water. Mix well, cover with the lid and let it simmer for 5 minutes.

In a separate pan, heat another drizzle of oil and add the fresh salmon cut into cubes of up to one centimeter. Cook it over medium heat for 5 minutes, season with salt and set aside.

Separately, cook the tagliatelle in plenty of salted water. Once cooked, drain them, keeping a ladle of cooking water, and quickly put them back in the pan with the spinach. Also add the cooked salmon separately.

Cream the ricotta by adding the cooking water until you obtain a smooth and not too liquid consistency. Add it to the pasta and mix, adjusting the consistency again with the remaining liquid. Divide onto plates and enjoy immediately.

If you prefer, you can prepare tagliatelle with spinach and smoked salmon, replacing the fresh salmon with 200 g of smoked salmon. Furthermore, for a more substantial and refined dish, use mascarpone instead of ricotta: you won't regret it!

Other combinations that work very well include salmon and courgette tagliatelle and those with peas , both very simple to prepare.

Conservation
