Spinach meatballs
Spinach meatballs are a very good and simple vegetable-based second course to prepare: here's how to make them!
Today let's see the recipe for spinach meatballs, a perfect delicacy as a light second course that you can serve in all sauces: alone, as finger food during a dinner with friends, accompanied by a light salad or together with some tasty sauce.
As always with meatballs, today we will see the basic recipe , but you can modify it as you like. The variant we like most is the one that involves adding a cube of stringy cheese in the center! Are you ready to make these vegetable meatballs together? So let's get started!

Preparation
How to prepare the spinach meatballs recipe
First, wash the spinach and put it in a pan without adding any seasoning. Cover with the lid and let them dry for a few minutes. Once ready, drain them and squeeze them with your hands (waiting for them to cool).
Chop them finely with a knife and sauté them in the pan with the oil and the garlic clove. A couple of minutes will be enough. At this stage also add salt .
Transfer the spinach into a bowl, remove the garlic and let it cool before adding the other ingredients: eggs , parmesan and nutmeg . Mix and only lastly add the breadcrumbs , as much as needed to obtain a dry consistency but not too much.
Form balls about the size of a walnut, roll them one by one in breadcrumbs and place them on a plate as they are ready.
In a pan, heat a drop of seed oil and fry your meatballs until they are golden brown. Then drain them with a slotted spoon and pass them on absorbent paper before serving.
As mentioned in the introduction, this recipe is simple to customize . For example, you can add a cube of stringy cheese to the center of each meatball (mozzarella for pizza and scamorza, even smoked, are excellent in this sense). Once hot, you will find a racy surprise capable of conquering everyone at the first taste.
Furthermore, you can cook the spinach meatballs in the oven (after spraying them with oil, at 180°C for 20 minutes ) or in an air fryer .
Conservation
The meatballs will keep in the refrigerator for 2-3 days. You can heat them however you prefer.
