Ingredients

For the buttered spinach

  • Fresh spinach – 500 g
  • Garlic – 2 cloves
  • Grated cheese – 2 tablespoons
  • Butter – 40 g
  • Fine salt – to taste
  • Pepper – to taste

Preparation

How to prepare the buttered spinach recipe

1

Wash the spinach well under cold running water, remove the most damaged and wilted leaves, then drain them well from the water.

2

Place the spinach in a sufficiently large pan without adding water or seasonings. Close with the lid and let it simmer over medium-low heat.

3

Once ready you can remove the lid and allow the excess vegetable liquid to evaporate or drain them in a colander and pressing with a spoon.

4

Then put the butter in a non-stick pan, place on the heat and let it melt over a low heat. Add the peeled garlic cloves and let them brown. You can also make them in smaller pieces if you like them and want to leave them.

5

Add the cooked spinach and cook for a few minutes over high heat. In the meantime, also season with salt and pepper .

6

Lower the heat and in the meantime prepare the cheese aside (Parmesan or even some good Pecorino). Add it, then close the lid and leave on the heat until the cheese has completely melted. Serve immediately.

You can easily replace fresh spinach with frozen ones. Simply let the spinach thaw at room temperature before proceeding as indicated in the previous steps. If, however, you want to know what, dip them in boiling water for a few minutes, squeeze them and sauté them in the pan as per the recipe.

A lighter variant is obtained using oil as in our pan-fried spinach recipe.

Conservation

Spinach prepared following this recipe can be stored in the refrigerator in an airtight container for 2-3 days .
