Sponge cake with Bimby

In less than 5 minutes your sponge cake with the Bimby will be ready to be baked. Here's the perfect recipe.
Sponge cake is a basic pastry preparation which, with its neutral flavor but at the same time easy to flavour, is well suited to the creation of many desserts. Despite its simplicity, however, it requires a minimum of attention to prevent it from deflating during cooking . So to avoid this eventuality we prepared the sponge cake with the Thermomix.
The power of the robot (keep in mind that you can prepare it with all models , from the oldest to the most recent – TM5, TM6 and TM31) together with the addition of a pinch of yeast , will give you a tall and soft sponge cake, perfect for filling. We know that yeast shouldn't be used, but trust us when we tell you that it is a valid help.
Ingredients
For the sponge cake
- Flour 00 – 300 g
- Granulated sugar – 300 g
- Eggs – 6
- Baking powder – 1 sachet
Preparation
Sponge cake with Thermomix
First make sure all the ingredients are at room temperature. Then break the eggs into the bowl, add the sugar , the sifted flour with the yeast and, to taste, some flavourings.
Work everything for 2 minutes. speed 4 until it is well swollen and foamy.
Butter and flour a 24 cm diameter springform pan (or line it with baking paper) and delicately transfer your dough, leveling it with a kitchen spatula.
Bake in the oven at 180°C for 30 minutes, testing with a toothpick before taking out of the oven. Let it cool completely before removing it from the mold and, if necessary, cutting it into discs.

We have deliberately left the dough neutral but you can flavor it to taste by adding the seeds of a vanilla bean, a sachet of vanillin or even a teaspoon of its extract. The variant with citrus zest is also excellent (lemon and orange to buy organic).
As for desserts with sponge cake, you are spoiled for choice. You can try your hand at a delicious mimosa cake , spring-like in taste and appearance, or with Neapolitan soup , a typical dessert from Campania. If, however, you are looking for a recipe that everyone can agree on, the cream and strawberry cake is the right choice for you.
Conservation
The sponge cake can be kept wrapped in cling film for 2-3 days . We advise you to prepare it at least a day in advance of when you are going to fill it: it will be easier to cut.
