Steamed vegetable dumplings are a vegetarian variant of the classic recipe typical of Chinese cuisine. Here's how they prepare.

Chinese vegetarian dumplings are a particular first course that recalls the well-known steamed dumplings, a typical dish of Chinese cuisine . In this variant we used carrots, cabbage, spring onion, garlic and ginger to create a tasty filling that has nothing to envy of the classic recipe.

Steam cooking gives the dish its characteristic flavor and the particular consistency of the dough. If you have a bamboo steamer, now is the time to use it. In fact, wood gives the dish a unique flavour, which is difficult to obtain with classic steel ones. One last piece of advice: in all cases use the largest and external leaves of the cabbage to line the bottom of the basket.

How to prepare the vegetarian Chinese dumplings recipe

First, dedicate yourself to preparing the pasta. Place the flour in a bowl, add a pinch of salt and pour in the water , mixing first with a fork and then, when it begins to take consistency, by hand. Knead the dough until it is smooth and homogeneous, then wrap it in cling film and let it rest for at least 30 minutes.

In the meantime, focus on the vegetables. Peel the carrot , remove the ends and grate it with a grater with large holes. Remove the roots of the spring onion and cut it into slices. Finally, the cabbage : remove the outermost leaves which you will need to line the steamer and finely slice the innermost ones.

Heat the oil in a pan and add the finely grated garlic and ginger , almost reduced to a paste. Then add all the vegetables and cook them over high heat until they have wilted and are very tender.

Add the soy sauce and continue cooking for another 2-3 minutes. Turn off and let cool.

Roll out the dough with a rolling pin or a machine until it reaches a maximum thickness of 1-2 mm. Place a spoonful of filling in the center and close in a half-moon shape (or according to the shape you like best). As they are ready, place them in the steaming basket lined with cabbage leaves.

Bring a pot full of water to the boil. If you want, you can flavor the water with ginger, bay leaves or Sichuan pepper. Once steam begins to form, remove the lid and place the basket. Leave to cook for 15 minutes .

Serve the dumplings with soy sauce or Chinese sweet and sour sauce .

This recipe is really versatile and you can, for example, use leek instead of or together with spring onion, add other grated vegetables (for example courgettes ), or sliced ​​mushrooms . The important thing is that the filling, once cooked, is very dry.

Conservation
