How to cook the recipe for stracciatella in broth

  1. First you need to shell the eggs in a bowl. We advise you to use organic or free-range eggs as much as possible, which can be distinguished according to the numbers shown on each egg .
  2. Beat them with the Parmesan, a pinch of salt and nutmeg.
  3. Bring the chosen meat broth to a boil (alternatively, for a vegetarian variant, use vegetable broth) then pour in the beaten eggs, stirring with a whisk. Cook for 5 minutes , until the eggs have congealed.
  4. At this point pour the portions into the soup plates and, to taste, complete with chopped parsley.

To complete the dish you can also add slices of grilled bread to make them crunchy. For an extra boost of flavor, once hot rub them with a clove of garlic. This dish is perfect on your Easter menu .

Conservation and variations of stracciatella in broth

Stracciatella alla romana should be eaten as soon as it is made . Therefore, storage in the refrigerator and freezing is not recommended.
