Strawberry tiramisu is prepared without coffee , the intensity of which would clash with the delicacy and freshness of the dessert. Mascarpone cream, strawberries, ladyfingers and eggs complete the whole: the ingredients are simple (as is the recipe for the rest) but with a unique taste. Preparation of strawberry tiramisu, the simple recipe
- First, wash the strawberries thoroughly, dab them with a paper towel and cut them into cubes or slices (leaving a few whole aside for decoration).
- At this point, put the cut strawberries in a bowl with about 20-25 g of sugar and the lemon juice. Mix well and leave to macerate for at least 20-30 minutes .
- Now prepare the syrup to prepare the mascarpone cream and pasteurize the eggs (we always recommend pasteurizing them to be safer. However, if you buy the product from a farm or from trusted retailers, you can ask them if it is necessary to do this step). To make it, put the remaining sugar and water in a saucepan. Put it on the fire and let the sugar syrup form which must reach 121°C . Use a cooking thermometer to be sure of the temperature.
- Divide the yolks from the whites and place them in two different bowls. When the syrup has reached the indicated temperature , pour half of it slowly into the yolks , whipping them with an electric whisk until the mixture is light and frothy.
- Beat the egg whites in the same way until stiff, always adding the other half of the sugar syrup slowly.
- Now gently add the mascarpone to the whipped yolks with the help of a spatula and mixing from bottom to top so that nothing disassembles .
- Add the whipped egg whites to the yolk and mascarpone cream and always be careful not to disassemble everything. Then put it to rest in the fridge.
- Prepare the syrup for your tiramisu with strawberries and ladyfingers. To do this, drain the strawberries, take part of them and put them back in the bowl with all the juice they have released and blend with a blender . The result will be a sauce to put in a baking dish.
- Now let's assemble the sweet tiramisu with strawberries. Take a rectangular baking dish of about 22-24 cm along the long side. Start by dipping one biscuit at a time in the strawberry sauce, do not let it soak too much otherwise it will become too soft and could break (just turn it once on each side and leave it for a few seconds ), making the first layer of biscuits in the pan.
- Cover with the mascarpone cream that you have taken from the fridge, a bite of cut strawberries and cover with a second layer of soaked ladyfingers.
- Proceed in this way to stratify the dessert until you have run out of ingredients. Remember to have a generous dose of mascarpone cream as the last layer of the summer tiramisu with strawberries.
- To complete, decorate the surface as desired with the whole strawberries kept aside and let it rest in the fridge for a couple of hours before enjoying it. You can indulge yourself with regard to the decoration of your dessert with strawberries: add a few mint leaves, carve the strawberries as you like and add them in different shapes. Make way for the imagination!

3 tips for a perfect strawberry tiramisu
– If you really can't beat the egg whites, add them to the yolks and sugar as they are: the recipe will be even easier. The taste will not be affected, however, keep in mind that the mascarpone cream will be less soft and more runny .
– When you wash them, don't leave the strawberries to soak in water for too long because they are very porous fruits and they lose their taste immediately.
– Before tasting it, try to wait a whole night : the next day the flavors will be blended and the dessert is even better!

Now that you've figured out how to make strawberry tiramisu with the original recipe, you also need to know how to store it: put it in the fridge in its baking dish for a couple of days and well covered in plastic wrap. You can also freeze it, covering it well with transparent film, for a maximum of months: you will then have to thaw it slowly in the fridge and serve it on the table as soon as it has completely softened (in this case we advise you not to overdo it with the strawberry sauce, as it will release more water due to defrosting which will make the dessert even more moist).
