Vegetable cheese, soy milk, potatoes and spices are the ingredients needed to prepare the vegan stuffed artichoke filling : a very simple side dish to prepare for those who want to propose different recipes than usual.

How to prepare stuffed artichokes with vegan cheese

To prepare the stuffed artichokes in the oven, start by cleaning the artichokes : remove the hardest external leaves, the tips and the final part of the stem. Using a teaspoon, remove the internal beard.

As soon as they are ready, dip them into a bowl full of water acidulated with lemon juice. Then boil them in plenty of salted water for 15 minutes .

In another pan, boil the peeled and diced potato .

Drain the artichokes and let them cool then do the same thing with the potatoes , mashing them while they are still hot. Then transfer them into a large bowl, add the grated vegetable cheese , soy milk and powdered spices . Mix well to combine all the ingredients and add salt to taste.

Stuff the blanched artichokes with the filling and place them gradually on a baking tray lined with baking paper. Drizzle with a drizzle of extra virgin olive oil and bake in a preheated oven at 180°C for 25 minutes. Once cooked in the oven, serve the baked stuffed artichokes au gratin.
