Sugar-free apricot jam

Naturally sweet, sugar-free apricot jam is simple to make using fresh, ripe fruit. Here's the recipe!

On the market there are various brands of jams without added sugar, i.e. prepared using only the sweetening power of fruit . But who said that these can't be prepared at home? Sugar-free apricot jam, for example, is an amazing preserve, light and sweet at the right level , ideal for filling tarts or to be enjoyed for breakfast on bread.

More correctly known as sugar-free apricot jam, it is prepared by replacing the traditional sugar (granulated or cane) with apples . In fact, this extraordinary fruit not only sweetens in a natural way , but thanks to the pectin it contains, it helps to gelatinize the preserve. In short, what more could you want?

How to make homemade sugar-free apricot jam

  1. First, wash the fruit well. The ideal would be to buy organic products since we will keep the peel for both of us .
  2. Remove the stone from the apricots and cut the pulp into cubes. We recommend using organic fruit, so that you can also use the apricot peel without risk.
  3. Transfer it to a thick-bottomed pan large enough to accommodate all the fruit.
  4. Remove the core from the apples and also cut them into chunks after peeling them, then add them to the pan.
  5. Sprinkle the fruit with lemon juice, mix and cover with the lid. Let everything macerate for about 1 hour, the time necessary for the fruit to release all its juices.
  6. Transfer to the heat and cook for about 40 minutes over low heat, stirring occasionally.
  7. Once cooked, you can decide whether to keep the pieces of jam or puree everything with an immersion blender.
  8. Test the saucer to check that the jam is ready, otherwise cook the jam for a few more minutes. Finally potted.
  9. Transfer it whilst still boiling into sterilized jars , close with a new cap and turn upside down to create a vacuum.
  10. Let them cool completely before storing them in the pantry, making sure that the cap no longer clicks. Alternatively, to create a vacuum, you can boil the jars full of jam and tightly closed in boiling water for at least 15-20 minutes (help yourself with a cloth to avoid rattling the glass).

The recipe for sugar-free apricot jam can also be followed to prepare other types of jams without added sugar . The important thing is to maintain the 2:1 ratio of fruit to apples. For example, try sugar-free cherry jam and you will taste how delicious it is!

And here is a video recipe very similar to our preparation, it differs only in two things: it does not macerate the fruit and adds 1 teaspoon of stevia in the preparation.

The sugar-free apricot jam can be stored in the pantry for a maximum of 3 months . Once opened, however, it should be placed in the refrigerator and consumed within a week.
