Sugar-free lemon jam
Sugar-free lemon jam is prepared with just two ingredients and is perfect for fully savoring the flavor of this citrus fruit.
Sugar-free jams are a healthy and equally tasty alternative to traditional preserves. Excellent for breakfast, spread on bread or biscuits, but also perfect for filling desserts, they are prepared using apples as a sweetener and gelling agent . So these two ingredients will be enough to prepare sugar-free lemon jam.
Clearly, having to use both lemons and apples with the peel, it is necessary to purchase organic and untreated products . The process, otherwise, is very simple. However, remember that the lemons will have to stay in water for 24 hours so start preparing in time.
Preparation
How to prepare the sugar-free lemon jam recipe
First, about 24 hours before the actual preparation begins, cut the lemons into 1 cm slices and place them in a bowl covered with water . If possible, change it at least 1-2 times. This step helps the citrus fruits lose their bitter taste.
The following day, cut the lemon slices into smaller pieces . Remove the core of the apples (but not the peel as it contains pectin, essential for gelatinizing the jam) and cut them into chunks too.
Combine the ingredients in a pan and cook for 40 minutes over low heat. If you like, you can decide to blend everything with an immersion blender in order to obtain a smoother consistency. To understand if the jam is cooked, proceed as usual with the saucer test .
Transfer the jam into sterilized glass jars , close with a new cap and turn upside down so that the vacuum is formed.
Keep in mind that sugar-free jams, as well as for desserts, are also excellent in combination with cheeses . In the case of the lemon one, which tends to be sour, we recommend lightly seasoned caciottas with a sweet flavour.

Conservation
Once opened, the jam can be stored in the refrigerator for approximately 2 weeks. In the pantry, however, it will keep for up to 3 months.
