Persimmons, apple and lemon: here's how to make a delicious sugar-free persimmon jam, perfect for preserving.

Jam, jam, compote … what a mess! Yet the distinction between the various preparations is there and it is also quite simple. However, for convenience we tend to use the term jam for all this type of preserves including sugar-free persimmon jam although it would be more correct to call it compote .

Persimmons , with their bright orange color, are one of the most anticipated autumn fruits. If well ripe they are very sweet as well as rich in vitamin C and are therefore particularly suitable for preparing a delicious sugar-free jam. Excellent for breakfast spread on bread or to fill your tarts, it is thickened in a completely natural way thanks to the pectin present in the apple which we will add. But let's see all the steps in detail.

How to prepare the persimmon jam recipe without sugar

  1. First, peel the persimmons and remove the seeds inside. Cut them into pieces and place them in a bowl.
  2. Wash the apple well, making sure to use an organic one, cut it into quarters and remove the core. Then cut it into chunks and add it to the persimmons. Sprinkle the fruit with lemon juice and leave to macerate for at least an hour.
  3. Then transfer everything to the heat (including the vegetable liquid) and cook for about 45 minutes . If you like, you can blend the persimmon compote to make it more homogeneous or decide to leave a few pieces. In all cases, to make sure it is cooked, proceed with the saucer test : dropping a few drops of jam onto a cold plate from the fridge and tilting it must solidify quickly.
  4. Transfer the hot jam into sterilized jars . Close with a new cap, turn upside down and leave to cool until the vacuum has formed. Only then can you affix the label and store in the pantry.

This jam can also be prepared with other varieties of persimmons such as cacamela , vanilla persimmon and loti . The important thing is that they are always well ripe. Furthermore, it is possible to flavor persimmon jam by adding spices: cinnamon and cloves go perfectly with this fruit.

Conservation

Sugar-free jam will keep in the pantry for a year. Once opened, it should be placed in the refrigerator and consumed within a week.
