Valigini Reggio Emilia, or valisein in local dialect, are a typical dish of Emilian cuisine . Basically they are pork rolls stuffed with mortadella, parmesan, garlic and parsley. They are then cooked in a tomato and onion sauce and served stewed , piping hot.
This very simple dish contains all the flavors of the area and is perfect if you want to experiment with some new recipes. They are also among the traditional agri-food products of the region. In short, you have no excuse not to try them.
How to prepare the suitcase recipe
- First , blend the mortadella and then transfer it to a bowl. Add the finely chopped parmesan, parsley and garlic and the egg. You should obtain a mixture that is not too moist, so you can also add some breadcrumbs.
- Slightly flatten the pork slices and place a small spoonful of stuffing in the center of each one. Fold the sides slightly then roll up, securing each roll with a toothpick .
- Melt the butter in a pan and brown the bags on all sides.
- Add the chopped onion, the tomato puree and start cooking. In total it will take about 25 minutes during which you will adjust the consistency of the sauce with the meat broth. Remember to add salt.

Reggio Emilia suitcases will keep for 2-3 days in the refrigerator . However, keep in mind that the meat may dry out slightly so it would be best to enjoy them at the moment.
