Sweet Turin

Sweet Turin

The Torino dessert is a tile of ladyfingers soaked in Alchermes and alternated with chocolate cream. A real delicacy!

Today we take you to discover a dessert which, despite its name, does not have Piedmontese origins: the Torino dessert. This recipe was in fact born from the hands of Pellegrino Artusi and is contained in the now historic manual "Science in the kitchen and the art of eating well" . The name is probably due to the use of hazelnuts , which we know are typical of Piedmont, and ladyfingers .

This tile is made up of layers of ladyfingers soaked in alchermes and rosolio alternating with a chocolate cream, the same one that then covers the dessert. In short, the recipe is really simple and perfect when you are looking for a dessert to bring to the table at the last minute.

Preparation

How to prepare the recipe for sweet Turin

1

First prepare the cream. Work the egg yolks with the sugar and butter using an electric whisk to obtain a frothy consistency.

2

Separately, melt the chocolate in a bain-marie with the help of a few tablespoons of milk .

3

Pour it over the egg yolks and mix to mix everything well. If it is too fluid, put it in the refrigerator for half an hour .

4

Once the cream is ready you can start assembling the dessert. Dip the ladyfingers in the alchermes and distribute 6 of them on a plate, making two rows of three biscuits each. Cover them with the cream then continue with two more layers of biscuits alternating with the cream. Artusi's original recipe calls for the biscuits to be soaked once in rosolio and once in alchermes. If you have both available you can proceed in this way.

5

Then cover the top and sides of the cake with the cream. For this step we recommend using a spatula. Then decorate as desired with whole hazelnuts and chopped hazelnuts .

We loved this dessert not only for the simplicity of preparation but also because it is suitable for all occasions, from dinners with friends to Sundays with family. The good Artusi, however, used to divide the ladyfingers in half lengthwise, we don't know for what reason. We do not recommend it not only because you risk soaking them too much but also because they would break.

Conservation

We advise you to keep the dessert in the refrigerator for a maximum of 2 days . Bring it to room temperature at least half an hour before serving.
