How to prepare the Benito Mussolini tagliatelle recipe

  1. First make sure the capon is well cleaned and flamed. Then place it in a sufficiently large pot together with the carrot and celery cut into rather large pieces. Insert the cloves into the onion so it will be easier to remove them and put it in the pot. Also add aromas such as bay leaves and pepper.
  2. Cover with cold water, add a generous pinch of salt and bring to the boil, leaving everything to cook over a low heat for 3 hours .
  3. In the meantime, prepare the tagliatelle . Make a well in the flour and break the eggs in the centre. The ideal would be to leave the eggs for 2 days in a package together with the truffle so that they absorb the smell.
  4. Start kneading first with a fork and then by hand until you obtain a smooth and homogeneous dough. Let it rest for 30 minutes under an upside down bowl.
  5. Roll out the dough with a rolling pin or with a granny duck until it reaches 1 mm thick then leave it to dry for another 30 minutes before cutting the tagliatelle.
  6. Filter the broth and transfer it to a pot suitable for cooking pasta. Also add the truffle sauce and bring to the boil.
  7. Cook the tagliatelle for 3-4 minutes then drain them and distribute them on the plates, completing with a drizzle of oil and the sliced ​​truffle.

The dish requires a minimum of preparation so if you prefer a simpler recipe we recommend opting for the tagliolini with truffle .
