Tagliatelle with salmon and peas

Salmon and pea tagliatelle are a first course with a delicate but at the same time very rich flavour, perfect for a quick lunch.

Salmon and pea tagliatelle are ideal for those who want to prepare quick and tasty first courses. The pea and salmon-based sauce, in fact, is prepared in the same time as pasta cooking and does not require elaborate steps.

This recipe is a light variant without cream or various cheeses usually used to bind the sauce to the pasta. However, no one forbids you to mix everything with spreadable cheese or fresh or cooking cream.

Ingredients

For the tagliatelle, salmon and peas

  • Dried tagliatelle – 350 g
  • Fresh salmon – 200 g
  • Frozen peas – 200 g
  • Shallot (or spring onion) – 1
  • Extra virgin olive oil – 2 tablespoons
  • Salt – to taste
  • Pepper – to taste

How to prepare the salmon and pea pasta recipe

To prepare tagliatelle with fresh salmon and peas, start by carefully cleaning the spring onion (or shallot), then chop it finely and brown in a pan with a drizzle of olive oil .

When the spring onion is golden brown, add the peas and the diced salmon , mix and cook for about ten minutes over medium heat. Salt and pepper.

In the meantime, boil the tagliatelle in abundant boiling salted water. Drain and sauté them in the pan with the seasoning. To make everything creamier you can stir in a few tablespoons of the tagliatelle cooking water. Finish with a sprinkling of freshly grated black pepper.

As mentioned in the introduction, you can make the dish more enveloping and creamy by adding some spreadable cheese (150 grams) or fresh or cooking cream (200 grams). Equally tasty and simple to prepare are courgette and salmon tagliatelle , a more summery variant of the dish.

Conservation

The tagliatelle prepared following this recipe can be stored in the refrigerator in an airtight container for a maximum of one day.
